| I've got a request in the Lounge. Mug shared her recipe for chocolate and blackberry muffins and a friend gave me a recipe for malteser ones. Anyone else got a great muffin recipe they wouldn't mind sharing with me? |

Strawberry and Cream Muffins
2 Eggs
1 tsp Vanilla Extract
280 ml (1 pint) single cream
200g Sugar
400g Flour (plain)
3 teaspoons Baking Powder
1/2 teaspoon Salt
200g Fresh Strawberries
Preheat the oven to 200°C (gas mk 6, 400°F). Place the eggs, vanilla extract, sugar and cream in a large mixing bowl and beat together until sugar is dissolved.
In another bowl place the flour, salt and baking powder and mix thoroughly.
Chop the strawberries into small pieces, and stir into the flour. Pour in the liquid, and mix together until just blended.
Line a muffin tray with paper muffin cases, and then fill each case to just below the top with the muffin mixture. Bake the muffins for 20-25 minutes. They are cooked when a skewer inserted into one and then removed comes out clean.
This recipe makes approximately 12 muffins. |

On my eternal search for delicious homemade muffins I found this recipe.
Basic Muffin Mix
Ingredients
225g self raising flour (or mix half wholemeal and half white flour for a healthier version)
1 tsp baking powder
75g melted butter
175ml semi skimmed milk
1 egg
Approx 200g fresh fruit or vegetables chopped
For fruit muffins also add 100g soft brown sugar
1. Pre-heat the oven to 200°C/Gas mark 6.
2. Place all the ingredients into a bowl and mix.
3. Mix in the fruit or vegetables of your choice, split between 12 muffin cases and bake for 15-20 minutes until golden brown.
Me and toddler rubba have made a batch this morning with a grated apple and 120g sultanas and some cinnamon. They are delicious! |
