Vegan Recipes

Black Bean Burgers.

These freeze well and are great in a sandwich with salad and chilli sauce.

1 can of black beans (2 cups of cooked beans)
1 can of diced tomatoes
1 onion, chopped and sautéed with pressed garlic
1 cup of chopped carrots
1 bunch of cilantro or parsley

Put the above in food processor.

Put mixture in bowl and add 2 1/2 cups of rolled oats and mix in.

Make into 12 burgers, putting on baking tray with baking paper on it, so that it does not stick.

Bake at 400 F for 15 minutes

They sound nice Tui. Heres my recipe for

Vege rolls

4oz cooked lentils
4oz ground peanuts
2oz breadcrumbs
Large Onion chopped
Small cooking apple chopped
Small carrot grated
Garlic
Sage
Parsley
Paprika
Black pepper
Large Frozen Puff pastry ( no animal fat one)

Saute onion, apple, carrot, garlic in olive oil. Add herbs and spices to taste along with cooked lentils, nuts and breadcrumbs. Mix well to a stiff consistency. Roll out defrosted puff pastry and use to make sos rolls. Brush with soya milk. Makes approx 24. Bake at 200C for approx 30 mins.

Sounds good SH. I don't know if I can get vegan puff pastry here. I'll have a look.

Sweet Potato Salad
2 large sweet potato (I use kumara) peeled, cubed and steamed 6-8 minutes till soft but still holding their shape. add dressing while still hot and leave to cool.

Dressing
1 1/2 tbsp cider vinegar
1 1/2 tbsp dijon mustard
1 tbsp honey
1/4 c oil.

Before serving add chopped spring onions. celery, red capsicum and parsley.
Keeps well in frig for a day or 2  but best served at room temperature.
