Smallholder- help please!!!I cannot find the thread where you gave me a recipe for making walnut bread. I bought the walnuts ready today. Would you mind telling me it again pleasey weasey coz I am going to try to make it tomorrow if I have all I need. Also would you recommend making it as a loaf or as buns? (I mean rolls if you don't call them buns like we do up here!!

No problem - It can be either rolls or buns! or loaf! All are nice. Enjoy.
Walnut Bread
1 cup strong white bread flour
3 cups wholemeal bread flour
2 teasp dried yeast
1 ½ teasp salt
1 tablespoon & 1 teasp sugar
350 ml water
2 desert spoons walnut oil
1 cup of broken walnut pieces
Can make as a loaf – cook as for wholemeal
Or use dough setting. Then shape into 16 rolls on a baking tray. Leave in warm place to rise for an hour. Brush with milk/egg/walnut oil (whichever you prefer) and bake at 200C for 12-14 mins.

i am going to make it tomorrow. I couldn't find walnut oil in any of our local shops. An organic shop/ health food/supermarket. so I will have to adapt the recipe.

Walnut oil is pretty crucial to the nutty flavour of the rolls Tui - so try to use another nut oil if you can get it.

I am sat here eating some of my walnut bread!! Smallholder that recipe works really well and they are delicious. My breadmaker conked out so had to make them without it, have slightly burnt the tops because I was playing with Littlest Magpie and got sidetracked, but really nice.

Forgot to ask my very stupid question- can I freeze them? I am the only one who likes walnuts and will never manage to eat them all alone!

Glad you like them. Yes they freeze well. I think they go particularly well with a bit of goats cheese, but my very favourite way of having them is when they are still warm with some steamed asparagus fresh from the smallholding. Yummy!

Mmm, that sounds nice. I had mine with cheddar and coleslaw- very nice.

i'm making it anyway with out the walnut oil. I will try and get some next time i go to a city. It'll be ready in 3 hours.

Here it is. Excellent bread. I can't wait to make it again with the walnut oil. I don't often cook with walnuts. They taste very good.
