Pasta Sauce

Currently making a big vat of pasta sauce to freeze in portions for a quick evening meal.

Chop 3 onions, big box mushrooms, 3 peppers, 3 leeks and fry in oil/butter (I use a combination of olive oil and garlic butter), fry until soft, then add in a glass or two of wine and boil for a bit.

Then add 8 cans chopped tomatoes, some lea and perrins, and a couple of stock cubes, bring to the boil, then simmer for about 20min.  

Decant into 1 or 2 portion containers (depending on your household size), the Lakeland stack a boxes are fab for this, and freeze.

Then in the morning take one out of the freezer, by the time you get home you'll be able to just reheat in the microwave or on the hob once you've got some pasta going.  You can then add ham/tuna and grated cheese if you wish.

You do need a big stock pot to make it in, and you can be flexible about what veg you chuck in, but it means you can eat some 'real' food easily on weekday evenings when you don't have the time/energy to cook from scratch.

great idea trinity. I always make too muc dinner and freeze left overs but making a big batch and really stocking up saves a lot of time.

I have a ready supply of the 0.75 litre stack a boxes for this purpose (the too much dinner and the bulk making)

i made a big pot of vege soup today and have boxed up 4 lunches worth.  I also made a loaf of bread intending to freeze it but my son ended up taking it home so I'll have to make another!

My panasonic bread maker was the best buy of last year, much cheaper than buying now that bread is so expensive!

Have loads of this in the freezer now. Would have eaten it straight away or at least some of it! but we have lots of salad stuff in frige to eat first.
Trinity have you got anymore easy ideas like this please.

Most other things I just tend to make double when I make it, but nothing to stop you making a big vat of say spag bol sauce/chilli and freezing, somehow reheating that and wacking on some rice/pasta seems doable after work!

Is your breadmaker the panasonic 255 one?  I really want one of those as have heard it's good.  How long does a loaf take?

I have the panasonic 254.  A quick loaf takes 2 hours (just put in slightly more yeast)

My fav pasta sauce is really unhealthy, but scrummy so I don't care.

Put all this stuff into a pan and heat gently so it melts together - a knob of butter, a small carton of single cream and a packet of Gorgonzola (about 200g I think). When its melted, add some grated parmasan and black pepper. Taste it and add salt if needed. Mix it with some cooked pasta and enjoy!
