Levi Roots

I just spent time looking at blogs and online recipes by Levi Root after a comment by Rainbow that she made Banana Pumpkin seed muffins. I couldn't find the recipe on line so could you post it Rainbow? I enjoyed looking at his webpage and other links that led from it. Smile

280g (10oz) plain flour
1 tsp baking powder
1tsp bicarb
1/2 tsp salt
3 lg ripe bananas mashed
125g (4 1/2 oz) caster sugar
1 lg egg
80 ml (2 1/2 fl oz) milk
90ml (3 fl oz) sunflower or groundnut oil
85g (3oz) halved pecans (optional)
40g (1 1/2 oz) pumpkin seeds

1. Preheat oven to 190C/gas mark 5

2. Sift flour, baking powder, bicarb and salt into a bowl.   In a separate bowl mix together bananas, sugar, egg, milk and oil.

3. Add wet ingredients to the dry and stir until they come together to form a batter.   No flour should be visible but it should still be lumpy so be careful not to overmix.  Add the nuts and pumpkin seeds and stir them in.

4. Spoon into paper cases set in a muffin tray.  Sprinkle extra pumpkin seeds on top and bake for 20-25mins until tops are lightly browned and springy to touch.  Cool on a wire rack.


I forgot the baking powder (only just noticed!) but they turned out really well!   Also missed the pecans as I didn't have any (and was using the recipe to use up overripe bananas).   I also added a liberal amount of cinnamon to give them a bit more 'oomph' and they are really yummy.

yummy muffins. Of course I made substitutions, flax seeds for eggs and soy milk but they taste lovely. Very Happy

The other recipes I thought I might try all have his special sauces in and without them they wouldn't be the same.

Haven't seen them but i haven't looked yet as I only just heard of him on the weekend. Haven't been shopping since.

I saw Levi Roots at the Nottinghill Carnival but he had such a long queue t otalk to him I didn't wait. The queue for the food on his stall was also very long. I haven't bought his sauce yet . I will look for it next time I am in the supermarket and then I can try some of his recipes.
