Lemon and Mint Chick Pea dipJust made this. Thought I'd share. I'm always being asked for the recipe and yet its so simple. The nice thing is for all us who are watching our weight is that there is no oil in it- not like bought humous which has loads in. You can vary the garlic if you don't like it as much as I do!
Lemon and Mint Chick Pea Dip
1 400g can chickpeas drained (save juice)
Juice from 1 lemon
big handful of fresh mint leaves
4 cloves garlic chopped finely
black pepper
Whizz all round in a food processor along with about 3 tablespoons of juice. Let flavours develop over a few hours. Serve with veg crudités or falafel and salad, olive bread or crisps to dip in- whatever you fancy. Also nice slightly thicker in salad sandwiches. Freezes well.
