LeftoversCurrently in the oven a special concoction following yesterdays yummy roast chicken from this month's Good Food Mag, so I did the following...
Cut up remaining stuffing/bacon balls, chopped remaining cooked new pots and cherry tomatoes, added chopped chicken and 2 cans of chopped toms, and mixed. Then blitzed some leftover bread, some cheddar and a bit of ricotta and sprinkled that over the top - is now cooking in the oven! Hopefully it will taste OK as the stuff yesterday day and with a bit of fruity sauce squirted over the top should be fine!
What other interesting leftover meals are people making?

that sounds yum! But I'd never get my OH to eat it
With leftovers from roast dinners I tend to shove the meat in a pan (we NEVER have leftover potatoes!!), add more carrots, onions and potatoes and simmer it into a stew. It's one of
my favourite meals.

I frequently add a few tinned tomatoes to leftovers, then top the mix with a few breadcrumbs and a bit of grated cheese. Works wonders!

Luckily mine isn't that bad! If he can squirt fruity/tomato sauce over it he's happy with most things!

I blame his mother!!! I have made huge progress from steak, ham, chicken, egg, frozen peas, chips and white bread which is all he ate when we met!!!
Anyway, for lunch today with leftover roast chicken, I chucked it in a pan with tomatoes, peppers, mushrooms, stirred it all around then chucked over some beaten egg. Looked very messy but it was yum!!!

I had left over new potatoes, chicken and egg chucked over today for my lunch - very similar! Was yummy!!! Last of Sunday's chicken gone now!

Made some leftover pastry into a great tart yesterday. Filled it with blackberries from the garden, strawberry jam and thickened it with the breadcrumbs left from making a treacle tart. Beautiful!
