serves 6
55 g unsalted butter
140 g Roquefort cheese
2 tablespoon of finely chopped walnuts
6 lamb steaks
Day before make the butter
Take HALF of the butter and cream it together with the cheese and walnuts. Add any salt and pepper to taste. Put it onto greaseproof paper and roll up and put into the fridge.
Next day take out the butter from the fridge and cut a slice for however many steaks you are using - can be just one and save the rest of the butter for later!
Melt some butter which you have saved from the 55g and heat a ridged pan and melt the butter. Fry for 4/5 mins each side. Serve with a slice of the waltnut and Roquefort butter. Enjoy!
