Jamie Oliver does a fab shoulder of lamb recipe - You also need a bulb of garlic, rosemary and olive oil.
Preheat oven to full blast
Break up the garlic bulb but don't peel, and put half the cloves in a roasting tin/casserole/whatever you're cooking the lamb in, along with half the rosemary.
Rub a bit of olive oil on the lamb shoulder and season and put in cooking dish.
Put in rest of garlic and rosemary and cover with tin foil.
Turn oven down to about 150/160 C and slow cook for about 4 hours til meat is falling off bone.
We had this for tea last sunday and it is scrummmmmmy

Ooooh, might try this one thanks. I did another Jamie one once which was slow roasting but with loads of wine and tomatoes. It was ok but I felt the lamb flavour had been overpowered. Thanks!

Let me know what you think?
When I'm feeling lazy I cook potatoes in the same pot - they go nice and lamby!

It didn't go quite as planned but was still lovely! For some reason, the lamb just wasn't cooking with the foil at all, so after 3.5 hours I took the foil off, whacked up the temperature and it was perfect!!! Roast spuds, yorkshire pud, leeks, carrots and peas to go with it as well as gravy - perfect! Especially with the nice bottle of merlot!

Ooh I love cooking lamb! Nice slashes in the flesh and then stuff with cloves of garlic anf sprigs of rosemary.
I once had lamb cooked by my MIL which had anchovies shoved into slits and it was really yummy- it did not taste fishy or anchovyish at all! Pleased your lamb was nice madax!
Another great recipe I do with a leg of lamb is called Raan and is an Indian recipe:
2.5kg leg of lamb
50g fresh root ginger chopped
6 garlic cloves peeled
rind of 1 lemon
8tbsp lemon juice
2 tsp cumin seeds
6 cardamoms
1 tsp ground cloves
1 tsp turmeric
1 1/2 tsp chilli powder
1 tbsp salt
300g natyral yogurt
150g whole unpeeled almonds
4 tbsp brown sugar
1. Prick lamb with a fork and make 12 deep cuts
2. blend ginger, garlic, lemon rind and juice, spices and salts in a blender/processor. Spread over lamp and leave to stand for 1hr in a flameproof casserole
3. combine 4 tbsp yogurt with almonds and 2tbsp of sugar. Stir in the remaining yogurt and pour over lamb. Cover tightly and leave for 48 hrs in the refrigerator.
4. Allow meat to return to room temp. Sprinkle over remaining sugar asnd cook uncovered in a hot over (220 degrees) for 30mins. Cover, lower temp (160degrees) and cook for 3hrs basting occasionally.
Delicious!
