Nice ice cream? Something retro like a trifle?

Thanks nic. Thinking of a steamed rhubarb pudding (we've got rhubarb on the brain here!) or a lemon curd brulee. Still open to any suggestions!

How about making individual pavlovas?
Dead easy!
Pipe or scoop meringue mix into three piles per person (so three individual meringues each). Layer with cream, strawberries and strawberry sauce. Yummy!

if you do individual rhubarb crumbles with oats and brown sugar in the crumble mix and a dollop of creme fraiche (sp) in the middle of the rhubarb they will taste yummy.

The chocolate pudding i posted is yummy and if you already have cocoa wouldn't cost too much. I didn't add the extra chocolate. Serve small portions with lots of berries or other fresh fruit. very elegant.
