Courgettes

Well yesterday's veg box included 4 courgettes, so had 1 yesterday just boiled with other veg, using 2 today in this recipe...

Adapting slightly as I have pancetta in rather than bacon, but hoping it will be good!  Haven't measured anything, just making the risotto part now in the way I usually do too (i.e. not adding the liquid slowly, but all at once, seems to taste the same!)

Sounds yummy though!

Having this veg box is making me find new things to try which is good!  Bought this afternoon the Riverford Farm Cook Book and the Vegetable Bible (Sophie Grigson) to help with doing things other than boiling!!!

How about courgette cake. I hope mine has them in when I get first delivery on Tuesday. Love courgettes. Fried in butter is my fave with them though!!! Or cooked in a tin if toms and topped with grated cheese.

Well it was yummy - a bit salty, but that was prob the cheese more than anything else!

Well I don't lke bacon so I would miss that out! But I also do something similar. I also use them in omelettes, frittata, macaroni cheese, cheese and courgette pie, quiche etc. I also like to do stuffed courgettes with nuts or coscous.
Also stir fry with ginger and garlic and some cashew nuts, or roasted with tomatoes on the vine and garlic and basil.
Use a potato peeler and peel them into strips to include in salad.
But......
I would never boil them!

I use them in ratatouille. Also do them sliced on a griddle pan and smother them in tomato puree and cheese.

ooh could you share your courgette cake and muffins recipes have got lots of yellow courgettes growing on school allotment although they are more like marrows !!

There is a chocolate and courgette cake recipe on the riverford website. I tried to make it and it didn't turn out as well as I hoped. Then again I didn't use all the right ingredients. Oh and I didn't have a grater. It tasted edible!

Can't find my courgette cake recip. It will turm up one day when I am not looking for it and guaranteed will be where I have looked. (sorry) Will a recipe for courgette and bacon muffins do?
