Canned Tuna

After clearing out the cupboards and finding 20 cans of tuna (!!!!!!!!!!!!) any suggestions as to things to do with it would be nice!

Wow!   That's impressive, trinity!  I thought I was a hoarder but that's something else.  Very Happy

I have a nice recipe for a pasta bake with tuna.   Basically, boiled eggs, tuna, onions and penne/twirly pasta covered in a cheese or white sauce and herby breadcrumbs on top.

No recipes, I'm afraid, but my 20 tins of tuna would be my cat's idea of cat heaven.

It would be our cats idea of heaven too, but they're not having them!

tuna & pasta bake

10 ozs pasta twists
6 ozs french beans - trimmed
400g can tuna
1 onion
large green pepper
large orange pepper
2 large courgettes
4 ozs frozen sweetcorn
4 ozs frozen peas
3 tbsps cornflour
1 pint semi-skimmed milk
2 ozs cheddar cheese grated
salt & pepper

Heat oven to 190C
Cook pasta
Cut french beans into short lengths and cook in boiling water for 4 mins.Drain & add to pasta.
Chop onion and peppers.
Cut courgettes into chunks.
Fry onion, peppers and courgettes to soften and add to pasta with peas and sweetcorn.
Blend cornflour to paste with 3 tbsp of milk, add rest of milk and heat gently, stirring until sauce thickens.
Add grated cheese ans seasoning. Add tuna to pasta and stir in sauce.
Bake for 15 mins.

Sounds like my cupboard! I always stock up when they are on offer and then don't use them.
Be disciplined and have tuna sandwiches every day next half term.

Another nice thing is stuffed peppers and tomatoes - mix a can of tuna with feta cheese, olive oil, fresh basil and plenty of s & p, stuff the peppers/toms and grill for about 15-20 mins.   Delicious.

Fish cakes - mix tuna with mashed potato, spring onion and herbs.  Coat in breadcrumbs and shallow fry until golden.

Wow! That's a lot of tuna!

Thai Fish Cakes

1 tin tuna
1 large-ish potato mashed
Handful coriander
1cm fresh root ginger
1 garlic clove
splash or two of lime juice
1 shallot or 1/4 small red onion

I blitz everything bar the tuna and potato in the hand blender then mix the whole lot together. You could add 1 whisked egg if you want (but I don't like egg). Make patties whatever size you  like then bake on a greased tray in the oven for 15 mins 180oC (fan oven) or shallow fry if you prefer.
