Butternut squashI have heard loads of people say they like this in various forms. Have never bought or tried any so got one today. Ideas for cooking it would be gratefully recieved Please.

Come to think of it why on earth would anyone buy one of those things then not know what to do with it. reckon it will lurk in the back of the fridge like the soggy cucumber!

You can turn it into soup, roast it like you would do parsnips, combine it with other veg for roasted vegetables, slice it into rings and stuff the rings and then bake it. This week I made a nice butternut, chick pea and cauliflower curry.
A simple way for a first go is to cube it and mix it with a tin of chopped tomatoes, chopped onion, garlic, herbs and a small amount of extra stock or wine -put it all in an uncovered casserole dish. Cook at 200C for about 40 mins. Mix in a few olives if you like them. Take out of oven and top with some grated cheese and breadcrumbs and then cook for a further 10 mins.

Might do that tomorrow smallholder thank you. That curry sounds good too. I bought a cauliflower as well. Looked at the chickpeas and didn't pick any up.

I love it roasted. Also good mashed with butter and nutmeg.

Even lazier, scoop the seeds out then stick in oven till soft/roasted (1hr ish??). Serve like a jacket potato.

Leave it to rot in the fridge...it is vile!!!! Put some sweet potato in there too!!!! Yuck, yuck, yuck! I know it's good for you so I eat it in different things but have to hold my nose! x

Butternut Squash & Red Pepper soup
1 large onion cut into wedges
1 butternut squash (1kg peeled weight) de seeded and peeled
1/2 pt veg stock
1 red pepper sliced
2 tbsp olive oil
TO SERVE
1/2 pt veg stock (check if needed)
200 ml creme fresh
nutmeg
1/2 pt milk
seasoning
Set oven to 200c / GM6
Put onion wedges, squash and red pepper into roasting dish
Sprinkle with oil and mix well
Roast for 1 hr until soft
Cool and remove red pepper skins
put veg and first 1/2 pt veg stock into processor and puree until smooth
Put puree some of second 1/2pt stock into large pan. You dont have to add the whole 1/2 pt - depends on consistency you want. Remember you will add milk in a minute.
Bring to boil
Reduce heat
Add milk, heat through
Add 1/2 of the creme fresh and season
Put into warm bowls. Spoon creme fresh into each bowl. Sprinkle with nutmeg. Serve.

I use virtually the same recipe without the nutmeg. It is really nice. I make a huge big pan full and freeze in portions. This soup inspired me to save some seed so I can try growing some this year.

I've grown butternut squash. Home grown has a really good flavour.

add some chilli to the soup recipe and make it spicy - yum
