bullaces and greeangages - making jam - help!!!!!!!!!!!!!!!!

Obviously, some of these will be used in variations of sloe vodka, but I am also going to have a go at jam for the very first time. Quick question - do I need a jam thermometer?

No - you can test for setting point by placing a little jam on a cold saucer, push it with your finger & if it wrinkles, setting point has been reached. x

On no - disaster!!!!!!!!!!! It won't set. What can I do?
Tastes nice though.

Boil it some more until it does? Did you add any lemon juice? Equal quantities of sugar to fruit?

If all else fails freeze it and use it as a pouring sauce for ice cream.

My Mum used to just keep adding sugar in those situations!!

Did you do a really rolling boil once the sugar had been added - and uncovered?

Panic over! It worked! And it tastes lovely!

I think the problems could have been that I didn't let it simmer long enough before adding the sugar. This releases the pectin that helps it to set, but I was too keen. Added to that myimpatience and my general state of panic about possibly wasting half of my beautiful bullaces...

Well its all sorted now. Was eventually put in jars at gone eleven o'clock and the first bit came out again about nine hours later for my breakfast.

Ah thats good. Well done! I'm making some tomorrow I think. The key to good jam making - so I have read - is slow simmering and cooking beforehand and a rapid quick boil afterwards!

Have made my greengage jam now. I could pose with a couple of well placed jars!
