Best sponge cake recipe

I am still looking for the best recipe for a simple plain sponge cake for birthday!

Any ideas?  Which recipe do you use?

Thanks for sharing this -- need a good & simple idea for a cke i'm making for my niece. How did you find doing the filling? Thats the bit i always struggle with - the cream & such just never goes right...

Does anyone know a tried & tested way of getting the cake filling just right or should i follow the bbc idea on that link?

Also, what about cake covering... I wan to ice it but im rubbish at icing sugar, was thinking about buying some ready rololed icing but then dont you need marzipan... I'm all a bit lost 00 I just want a to make a simple cake with white icing on the top that I can decorate... but how do I do it!!?!!!

Also, I just followed the instructions from the BBC site for the butter icing and it worked fine.  Actually, didn't quite follow it!  I added lemon juice instead of vanilla, as I was using lemon curd instead of jam.  Will use jam and vanilla for the kid's cake though.

WELL (I say that with my arms crossed and a stern look on my face) I cant say im impressed with the cake recipe, i thought i would try it instead of my trusty old faithful one. I'm now on my 4th cake.... 1st one didnt even stay together - Fell apart as i took it out the oven

2nd one Burnt!

3rd Wouldn't cook properly and stayed like gloop

4th is just about to come out of the oven now....

Im not impressed!!! Though Maybe its my new oven.... maybe its me....

everyone always raves about my sponge cakes and have never had a failure (famous last words !)so here we go
weigh eggs in eggshells and then use that quantity of all other ingredients caster sugar, sifted SR flour and marge/butter
I cook mine at 180 in my fan oven for 22 ish mins

How many eggs do you use?

3 but have own chickens so the weight varies usu about 8oz

Somewhere I have a lovely lemon cake recipe from my cousin in Poland that you do like that fccwidow - weigh your eggs and then same or half weight of all other ingredients. Works a treat.

They seem to do a lot more of that kind of baking on the continent, as well as using the US method of cups which I like too.  I'm not one for following recipes accurately at the best of times!
