ApplesI have lot s of apples at the moment so I have been making everything I can think of to use them up as well as freezing apple sauce and apple slices. Anyone got any favourite recipes to share?
Apple Tart
1 ¼ cups self raising flour
3/4 cup brown sugar
1/3 c oil (grapeseed or light olive oil)
1 tsp vanilla
2 tsp ground linseed soaked in 2 tbsp water (replaces 2 eggs)
Press into oiled baking dish (24 cm) Mixture should be thin.
Top with sliced apples (pears ,bananas berries etc) about 4-5 cups of fruit.
Sprinkle over mixture of 2 tbsp sugar 1 tsp cinnamon
Bake 180 oC for about half an hour till golden brown.

I have a lot of apples on the farm of several varieties. Correctly stored ones individually wrapped in newspaper in cardboard boxes will store for several months if kept in a cool room which saves having to deal immediately with a glut and use too much freezer space. For example I have only just finished my cooking apples that I stored back in October. The skin wrinkles but the fruit is good inside. Varieties such as Bramley cooking apples mellow during this time so that they become as sweet as eaters. As I have several varieties of apples all ripening at different times, I can be eating my own apples from the end of July until March!
With ones that can't be stored I do as you have described. But I also add them generally into the cooking I do, e.g to the tomato sauce I make for pasta/chilli as they bring out the flavour of tomatoes, or I put them into curries, roasted veg, grate them into a nut bake, add to soups, salads etc. I add them automatically as a general ingredient. I like good old apple crumble too!
Each year I make apple and ginger jam and also a spicy apple chutney.
And of course any that aren't used always go down well as a piggy treat! Some are also left for the birds.

Baked apples are nice stuffed with brown sugar and sultanas.

Smallholder. I don't have any where cool to keep apples except the fridge. my garage gets really hot on the daytime and I have no basement. So I use up apples when I have them! the jam sounds good. I haven't made jam for a long time as I don't eat bread for breakfast. (I love my oats too much)
Baked apples are good. I will make some. I had forgootten about them.

Ok I'll post it and you can decide if or how you can adapt it. I went through a phase of always cooking it when there were people round as everyone loved it.
BASE
125g sr flour
50g soft brown sugar
25g ground almonds
75g butter
1 teasp lemon juice
1 egg yolk
FILLING
500g cooking apples peeled and cored
75g soft brown sugar
grated rind of a lemon
1 teasp of lemon juice
TOPPING
50g plain flour
150g soft brown sugar
1 teasp ground cinnamon
50g butter.
BASE
Mix the flour, sugar, ground almonds, butter, lemon juice and egg yolk in processor bowl. Process until well mixed and press in to a loose bottomed 20cm cake tin.
Slice apples and mix with remaining filling ingredients and arrange over sponge mixture.
Process topping ingredients for 5 seconds and sprinkle over the apples.
Bake in a pre heated moderate oven. 180c 350f for 1 to 1&1/4 hours until golden.
Cool slightly then carefully push out of tin onto serving plate. Serve hot or cold.
You can use either light or dark soft brown sugar. The dark gives it a love;y treacly taste.

Looks good. Quite similar to my recipe but with an extra layer on top. Ground almonds and lemon juice are a good addition. I'll try it and let you know!

Shame you can't store them. I keep mine in a spare bedroom that we don't heat ( unless someones staying of course!) I'm just doing the jam recipes for you now.

Apple and Ginger Jam
3lbs cooking apples
1 pint water
grated rind and juice of 2 lemons
1 teasp ground ginger
3 lb sugar
1oz fresh grated ginger
Peel and chop apples. Put in pan with water, lemon rind and ginger. Bring to boil, then reduce heat and simmer until tender. Add sugar and stir over low heat until sugar has dissolved. Bring quickly to a rolling boil and boil hard until setting point is reached ( approx 15 mins). Pot into sterilised pots in the usual way.
Makes about 7 jam jars.
I assume here you have made jam before and know when its done etc and how to sterilise your jars etc.

thanks for the recipe. Yes I know about making jam although i haven't for a while. I even have lots of jars saved. I'll give it a go tomorrow.

Here's the jam. It took me two days to find someone who had lemons. Everyone's trees seem to be having a lull at the moment. then a couple of days for the TA to bring the lemons. Then I washed the jars last night and this evening I started to make it. Discovered that i had left the ground ginger at school from the time we made gingerbread men. Never mind I just put in extra fresh ginger. Then i discovered that i didn't have much white sugar (8 oz) , so put in what i had plus some brown sugar but still only got to 2 lbs but i figured it was enough! and it was! it tastes great and it set beautifully.
typical of my cooking. I always seem to modify recipes when i don't have all the ingredients. Thanks for the recipe smallholder.

Looks good Tui. My cooking is just the same - I'm always improvising. Your jam looks darker than mine - that will be the brown sugar - but I bet it tastes just as good. Just remember using less jam may mean it doesn't store as well so put it in the fridge when you have opened a jar. Enjoy!

I usually keep jam in the fridge anyway to keep the ants out of it! The brown sugar would make it darker.

It won't use many, but apple scones are nice. Just grate an apple in to the scone mixture. Apple bran muffins too are good.
