I have a glut of corn on the cobs from the last couple of veg boxes, apart from the yummy Jamie Oliver Maryland chicken recipe does anyone have any other good things that make use of lots of sweetcorn?  Got the in laws round for lunch on Sunday, so trying to think of some things that can use up some veg, so already planned brocolli/stilton soup for starters as have lots of brocolli.

You could make sweetcorn relish (it keeps for months). Or sweetcorn fritters. I like tuna and sweetcorn sandwiches, sweetcorn on pizzas and with any kind of pasta.

Thai sweetcorn cakes? Probably wouldn't go with your Sunday lunch though.

The broccoli stilton soup was nice, but I don't think I used enough stilton, wasn't brave enough, but the left overs we had out the freezer yesterday was more broccoli than stilton - still tasted nice though!

Got a carrot mountain at the moment so going to make carrot soup today.
