Made a yummy leek and potato soup last weekend, and this weekend made a creamy carrot soup - great way to use up a glut of carrots from the veg box!  Just used stock, potatoes, onions and carrots, plus stirred through some cream at the end - yummy Smile

I made soup today too; just a random selection of leftover veg - carrots, courgettes, leeks, onions, celery and potato. Makes me fell all autumnal with the high winds but lots of warm comforting soup to sup!

I made the leek, potato and chickpea soup!! I even brought some granary bread!!! It's really windy adn cold here today and still not feeling wonderful so it was amazingly comforting! x

I made some tomato soup. It was yum too. Love leek and potato. Have a few leeks so might do that.

Used a couple of pounds of tomatoes some carrots and onions, blended after cooking and that was about it really. Oh yeah and some stock. about 1 pint. You can add whatever seasoning you want and even tastes nice with oranges as well!!

i got inspired by reading this so made some soup for lunch.
Japanese style, udon noodles, grated ginger, wakame seaweed, grated carrot, chili sauce, soy sauce, shitake mushrooms with miso, pakchoi and spring onions added at end.
Delicious.

Making soup is good, but it's not the only great thing about winter!   What about fruit pies and crumbles with custard?   Mulled wine?  And just SNOW!   I love snow and winter in general.   It cannot get too cold for me in winter - loved it when I lived in Sweden and it was -30 for a week or so!  Everything looks so beautiful then.

Soup is great!!!  I made a huge pan today for nothing - left over roast chicken, root veg and leeks hanging around in the fridge, dried pulses and barley from the cupboard and turkey stock in the freezer from the turkey last Christmas - a real winter warmer!!!!

I made butternut soup last week after lots of people had said it was lovely.  It was HORRIBLE!  I think it is because it was so sweet.  Love soup normally.

I like butternut squash soup but have to add spices to give it a kick otherwise I agree it can be far too sweet.

I made butternut squash soup based on a recipe which i may have got from this forum. It was yummy! I didn't have a red pepper as the original recipe said so i added an extra onion which made  nice contrast with the sweetness of the squash. If i did get he recipe from here thank ou to whoever it was!

Sorry soup all eaten!!

Butternut Squash & Red Pepper soup

1 large onion cut into wedges
1 butternut squash (1kg peeled weight) de seeded and peeled
1/2 pt veg stock
1 red pepper sliced
2 tbsp olive oil

TO SERVE
1/2 pt veg stock (check if needed)
200 ml creme fresh
nutmeg
1/2 pt milk
seasoning

Set oven to 200c / GM6
Put onion wedges, squash and red pepper into roasting dish
Sprinkle with oil and mix well
Roast for 1 hr until soft

Cool and remove red pepper skins
put veg and first 1/2 pt veg stock into processor and puree until smooth

Put puree some of second 1/2pt stock into large pan. You dont have to add the whole 1/2 pt - depends on consistency you want. Remember you will add milk in a minute.
Bring to boil
Reduce heat
Add milk, heat through
Add 1/2 of the creme fraiche and season

Put into warm bowls. Spoon creme fraiche into each bowl. Sprinkle with nutmeg. Serve.

I didn't peel squash, just deseeded to roast then scooped out; also just realised i forgot about nutmeg and milk but did more water and large dollop of creme fraiche!

Enjoy with hunks of brown bread!
