| Picked up a 3 dozen Lakeland free range eggs today because they were reduced to 66p a dozen! They're in date for another week (so probably fine for another week after that too) and I have a few ideas what to do with them (had eggy bread for lunch! and I have a lovely pasta bake recipe with tuna and eggs) but wondered if anyone has any ace recipes using eggs other than cakes? |

| fritata - like a big thick omelette with loads of courgettes, peppers, spring onions, mushrooms and cheese. Serve cut into wedges with salad and crusty bread. |

What about egg custards? I know they are like cakes. Quiches? You could make your own pasta or noodles? Hmmm my Mum used to make an egg and cheese bake which was layered between bread- it was lovely really despite sounding awful. Hmm will think some more! _________________ Learning is finding out what we already know. Doing is demonstrating that you know it. Teaching is reminding others that they know just as well as you. Thanks for those, some great suggestions! The Anglesey Eggs looks really tasty and Huevos Rancheros looks pretty easy so may all get made. _________________ Waheeeeeeeeeeeeeeeeeee.... house! |

Pickled eggs! Hard boil your eggs, shell them and put them into a big sterilused jar and fill with pickling vinegar. Add any spices or chillies that you like and leave for a couple of weeks.
Quiche and fritata things freeze reasonably well.
Bake a cake. |

They'd be wasted pickled, JD! I only ever used to eat pickled eggs on late night, drunken trips to the chippie and I don't seem to have any of those any more
Trying to avoid baking too many cakes because of the diet but might make some fairy cakes to cheer everyone up at school next week. _________________ Waheeeeeeeeeeeeeeeeeee.... house! |

OMG. I can't stand mayo and the mere thought of putting egg mayo in a sandwich makes me feel ill. _________________ Waheeeeeeeeeeeeeeeeeee.... house! |

I can hardly even bear to have a jar of mayo in the fridge, trinity. And I HATE it when you get a salad in a restaurant and it's been ruined with a load of mayo on top. YUCK!!! _________________ Waheeeeeeeeeeeeeeeeeee.... house! |

Oh dear! What is it you don't like about it - the taste or the texture? _________________ www.trinityeducational.co.uk |

The taste, I think. It's a really weird taste. I get funny looks if I ask for a tuna sandwich with vinegar instead of mayo sometimes too. I find it tastes greasy which I don't like. I generally like sharper, 'cleaner' tasting things, I think.
only thing worse than mayo is salad cream..... ! _________________ Waheeeeeeeeeeeeeeeeeee.... house! |

I'm with you on salad cream, don't like that too much at all, but a good quality mayo is yummy!
Although I do usually have balsamic vinegar as a dressing rather than mayo on a salad. _________________ www.trinityeducational.co.uk |

I like a good coleslaw but have to keep the mayo to a minimum in it. Suspect a posh mayo might be better but I'm not bothered enough to spend any money on it. It just annoys me when I order a salad and there's no mention of any dressing to find it comes covered in some gloop or other which I don't like. _________________ Waheeeeeeeeeeeeeeeeeee.... house! |
