Wow! That's impressive, trinity! I thought I was a hoarder but that's something else.
I have a nice recipe for a pasta bake with tuna. Basically, boiled eggs, tuna, onions and penne/twirly pasta covered in a cheese or white sauce and herby breadcrumbs on top. _________________ Waheeeeeeeeeeeeeeeeeee.... house! |

| No recipes, I'm afraid, but my 20 tins of tuna would be my cat's idea of cat heaven. |

Sounds like my cupboard! I always stock up when they are on offer and then don't use them.
Be disciplined and have tuna sandwiches every day next half term. |

Another nice thing is stuffed peppers and tomatoes - mix a can of tuna with feta cheese, olive oil, fresh basil and plenty of s & p, stuff the peppers/toms and grill for about 15-20 mins. Delicious. _________________ Waheeeeeeeeeeeeeeeeeee.... house! |

| Fish cakes - mix tuna with mashed potato, spring onion and herbs. Coat in breadcrumbs and shallow fry until golden. |

Wow! That's a lot of tuna!
Thai Fish Cakes
1 tin tuna
1 large-ish potato mashed
Handful coriander
1cm fresh root ginger
1 garlic clove
splash or two of lime juice
1 shallot or 1/4 small red onion
I blitz everything bar the tuna and potato in the hand blender then mix the whole lot together. You could add 1 whisked egg if you want (but I don't like egg). Make patties whatever size you like then bake on a greased tray in the oven for 15 mins 180oC (fan oven) or shallow fry if you prefer. |
